Living in Texas the last 3 years taught me a lot of things. One of those things is a profound love for fresh tortillas. Since moving to England, well, let’s just say that’s pretty much impossible to find. So, I went on a mission to make them myself. I brought some tortilla flour with me from good ol’ Abilene and made them with that and they were pretty good. BUT it wasn’t good enough for me. Here is the recipe that has saved us from missing the lovely delicacy.

Eight 6-8 in tortillas
Combine in a large bowl or the bowl of a heavy-duty mixer:
2 Cups bread flour (I use King Arthur, it’s the best in my opinion)
1 tsp baking powder
1 tsp salt
1/4 Cup vegetable shortening or lard (I didn’t have this so I used 1/4 C & 1 1/2 tsp unsalted butter softened)
3/4 Cup HOT (115-130F) water
Mix by hand or on low speed until the dough comes together.
Knead by hand or with the dough hook on low to medium speed until smooth, about 4-6 minutes. (I just used my hands and worked it)
Divide the dough equally into 8 pieces and roll them into balls.
Cover and let rest for 20 minutes.
Roll out each ball of dough into 6-8 inch round about 1/8 inch thick. If a dough round is resistant, move to the next piece and return later to finish rolling.
Heat a large cast-iron or nonstick skillet over medium heat.
Slide the tortillas onto the skillet one by one, cooking until brown spots appear, about 30 seconds on the first side, 15 on the next.
Cover the cooked tortillas to keep warm while you cook the rest.
My rolls ended up a little dry after I let them rest so I just wet my hand a little when I went to roll them out and gave it a little extra moisture.
I rolled out the balls so that they were almost opaque.
I cooked mine on a cast-iron skillet and kept it pretty warm. I would say more medium/high.
Once I was done cooking I placed them in a foil pocked I made. I just closed up 3 sides of two pieces of foil and then placed a wet paper towel inside. Once a tortilla was done I would put it in there and close it up. I have found if I don’t add the paper towel they end up a bit dry.
