1 can corn (drained)
1 can black beans (drained)
1 can salsa
2 pieces of chicken (cubed or shredded)
1 cup rice
Throw all ingredients (except rice) in a pan and cook until chicken is done.
Throw all ingredients (except rice) in a crockpot on high for a few hours (or low all day)
Cook rice according to package
Put rice in bowl and put chicken mixture over rice.
I shredded my chicken, but I imagine cubing it would be good too. I also added some Emerel’s Creole Seasoning to give mine a little kick.
