1/4 Cup Bread crumbs (i used italian, but you can use regular)
2 Tbsp chopped Parsley
1/2 Lime – juiced (or lemon if you prefer)
1/4 Cup Olive Oil
Heat the oven to 200C/400F. Season and put the salmon fillets on a lightly buttered non-stick baking tray. (I used non-stick foil so I could omit the butter)
Mix the breadcrumbs, parsley, lime juice, 1 tbsp oil and Parmesan. Cover the salmon with the breadcrumb mixture and bake in the oven for 10-12 minutes (20 minutes if salmon is frozen) until the salmon is cooked through and the breadcrumbs golden.
