Here’s a little food for the soul.
I first had this soup when I was dating my husband and it has become a favorite in our house!
Italian Sausage & Pasta Soup
You can add in veggies if you like. My family isn’t too keen on anything else in there and frankly we like it plain and simple.
BUT don’t let the way we eat it from stopping you to add in more yummies!
If you haven’t heard of Penzey’s Spices – you need to get yourself aquatinted with them!
I buy ALL of my spices through them. You won’t regret it.

Ready for the pasta to be put in!
You can use any small pasta you have on hand. I use the orzo but if I can’t find it I’ve been known to use the small stars or ity bitty round ones. Just make sure they’re little. And trust me – 1/2 Cup is PLENTY! I always thought to add more but you have to remember that when your pasta cooks it gets bigger. AND this soup is super tasty the next few days and it will continue to soak up the liquid so stay easy on the pasta. 🙂
When the soup is all done, I always use my handy dandy skimmer to get the grease off the top. If you don’t have one, just use a spoon and scoop it up. If you want to cut back on the grease you can always substitute the sausage for ground pork/turkey and add in some sausage seasoning. Penzy’s has a pizza seasoning that you can add to ground meat to give it the flavor of sausage. It’s worth a try if you want to cut back on the calories!
This soup is also a great one to freeze. I usually just pop it in a ziplock bag and freeze it.
When reheating it, I always add in some extra chicken stock since the pasta soaks up lots of the broth.
