As many of you know I’ve been on the “lose the baby weight” train and one of the biggest changes has been my diet. I’ve been told by countless friends who are in great shape that diet is 80% of weight loss while working out is only 20% of it. SO – since I don’t always have enough time to work out, keeping my diet in check is #1.
One of the yummiest breakfast meals I make is a spinach-mushroom-ham-cheese omelette. Now, I know there are lots of people who CRINGE at the sound of “mushroom” but I’m here to say you don’t have to put them in there if ya don’t want to. Whatevs.
I don’t measure so bare with me on this – I’ll give you the best estimate I can.
2 eggs wisked w/a splash of milk
1 slice of deli ham
1/8 cup of feta cheese
1 triangle laughing cow low fat cheese
1 cup uncooked spinach – chopped
1/4 large portabella mushroom
1/4 tsp. nutmeg
1-2 Tbsp Olive Oil
1/2 tsp. garlic powder (or 1 clove garlic minced)
1/2 tsp. onion powder (or dice up some onions)
salt & pepper to taste
Other yummy combinations:
spinach, ham & onion
spinach, ham & bell beppers
spinach, ham & tomato
Put olive oil in small pan & heat.
Put spinach, mushrooms & ham in pan and saute’ until spinach is wilted and ham is cooked through. I like my ham to be more on the “well done” side so I saute’ it for about 5-7 minutes or so.
Sprinkle w/seasonings while sauteing.
Remove spinach, mushroom & ham from the pan and put it in a cute little side dish.
Wipe out your pan & spray with cooking spray / a tab of butter.
Pour in egg/milk mixture on a med/low heat.
When eggs seem mostly done on the bottom, I have issues and have to flip it over to cook the egg entirely before adding in any ingredients. I can’t stand the site of raw eggs, unless it’s a fried egg and then that yolk better be runny!
Put all your ingredients on top of the egg.
Fold it over and let it melt that yummy cheese.Again, I heat it on both sides so all of the cheese gets properly melted.
Put it on your plate and then thank me for the yumminess in your mouth.
