Hot, creamy, delicious. That’s what comes to mind when I think of this corn dip. This recipe was introduced to me when I was pregnant with the twins and I used to crave it like crazy! I remember one morning I actually made it for breakfast! (twin pregnancy cravings are no joke people) I wanted to update the recipe for you all so you can enjoy it this fall at all those fun family & friend gatherings!
Mayo, Corn, Chipotle Ground Red Pepper, Garlic Powder, Cheddar Cheese,
Monterey Jack Cheese, Cilantro, Green Chiles, Green Onion & Tomato
Put all ingredients in oven safe dish.
(except for green onions, cilantro & tomato)
Mix together & cook at 350F for about 20 minutes.
Top with fresh ingredients (cilantro, tomato & green onion) and serve with tortilla chips.
That’s it – super easy & super yummy!
Delicious Hot Creamy Corn Dip
A perfect side dish to bring to a pot luck or even a night in at home.
- 2 cups cheddar cheese shredded
- 1 cup monterey jack cheese shredded
- 1/2 tsp chipotle ground pepper
- 1 can diced green chillies (40oz) partially drained
- 1/2 cup mayonnaise
- 1/2 tsp garlic powder (or 1 clove minced)
- 1 bag frozen sweet corn cooked (12oz)
- 1 small tomato diced
- 2 tbsp cilantro chopped
- 2 tbsp green onions sliced
Put shredded cheeses, seasonings, chilies & corn in oven proof dish.
Mix ingredients well.
Pop in oven for about 20 minutes, or until bubbly.
Take out of oven & top with fresh ingredients: cilantro, green onion & tomato
Enjoy & try not to eat the whole bowl by yourself.
